LEMON Butter Cookies (Sables au Citron) Makes 50 cookies Cookies are not about simpler or more satisfying that Sables, butter cookie base in France. They are homey, simple cookies are sometimes not flavored at all (the better to show healthy as all the butter-) and sometimes gives a little taste, subtle or bold. In ancient Pâtisserie Lerch, M. Lerch, whose affection for cookies is clear, generously flavored with grated sabers coats of lemon and sugar edges so out of the oven with a touch of sparkle. Because the dough is made with "powdered sugar, the cookies are softer and more tender than most butter cookies, but because the records are rolled and sliced and baked-, are easier to make many of their brethren of butter. There are only two things you should remember when you make these swords, tips M. Lerch passed me. First, be kind when you mix in the flour. Tender cookies rely on a touch, so you do not want to rough up the flour and activate the gluten. Secondly, the records give the dough a good long rest in the refrigerator. Cooling the dough relaxes the gluten and also helps the cookies hold their shape during slicing and baking. 2 sticks (8 ounces, 230 grams) unsalted butter, at room temperature 2 / 3 cup (70 grams) of powdered sugar, sifted 2 large egg yolks, at room temperature a pinch of salt 2 teaspoons vanilla Grated zest of 1-1 1 / 2 lemons (to taste) 2 cups (280 grams) all-purpose flour About 1 / 2 cup (100 grams) sugar, for coating 1. Put the butter in the bowl of a mixer fitted with the paddle attachment and beat on medium speed until smooth. Add sifted icing sugar 'and beat again until mixture is smooth and silky. Beat in one egg yolks, followed by the salt, vanilla and lemon zest. Reduce the mixer speed to low and add flour, beating until it disappears. It is best underbeat Overbeat that at this point, if the flour is fully incorporated, that is fine, just mix the remaining flour to mix with a rubber spatula. Place the dough on a counter, which meet in a ball and divide in half. Wrap each piece of dough in plastic wrap and refrigerate for 30 minutes. 2. Working on a surface smooth, the shape of each piece of dough into a log that is 1 to 1 1 / 4 inches (2.5 to 3.2 cm) thick. (Get the right thickness and length at the end has to be right.) Wrap logs in plastic and refrigerate for 2 hours. (Dough can be wrapped airtight and kept refrigerated for up to 3 days or stored in freezer up to 1 month.) 3. Position racks to divide oven into thirds and preheat the oven to 350 degrees F (180 ° C). Line two baking sheets with parchment paper. 4. While the oven is preheating, work on the sugar coating: Whisk the remaining egg yolk in small bowl until smooth and liquid enough for use as a varnish. Spread the sugar on a piece of wax paper. Delete records from the mass of the refrigerator, unwrap, and let them lightly with a little egg yolk. Make the records in the sugar, gently pressing the sugar to get it to stick if necessary, then, with a sharp thin knife, cut each log in cookies 1 / 4 inch (7 mm) thick. (You can make these thicker if you like, just bake longer.) Place cookies on baking sheet covered, leaving about 1 / 2 inch (1.5 cm) of space between them. 5. Bake cookies for 12-14 minutes, or until set but not browned. (It's fine if the yolk brushed edges brown a bit.) Transfer the cookies to cooling racks to cool to room temperature. Maintenance: tight Lunches, the cookies will remain for about five days at room temperature. Because the sugar coating will melt, these cookies are not suitable for freezing.
